chore: remove binaries from tracking, clean up .gitignore
- Remove launcher binary from all git history (git-filter-repo)
- Add launcher, run/*.pid, run/*.log to .gitignore
- Remove tracked run/assistant-bot.pid (runtime file)
- Add dev-scripts/reset-password.sh
